Yucatán in Austin
The Yucatán cooks a world apart from the center — achiote and bitter orange instead of the chiles everyone expects, a Maya kitchen with its own pantry. Cochinita pibil is pork bathed in recado rojo, wrapped in banana leaf, and slow-roasted until it falls apart.
